Pasta Dough

Ingredients

  • 2 cups AP flour 
  • 3 eggs
  • 1/2 tsp olive oil

Method

  1. Create a little bowl out of the flour- actually a nice wide bowl so that the eggs don't spill out like they did on me... 
  2. crack the eggs into the bowl you've formed and whisk them together, slowly incorporating the flour until you have a decently thick dough 
  3. When the walls are breaking and you can't keep it countained any more, in one quick smooth motion grab the dough and begin to knead it. Yes, it makes a mess but just keep kneading! 
  4. Keep kneading until the dough is uniform throughout and no longer sticky
  5. Wrap in plastic wrap for at least 20 minutes

Ingredients

  • 4 Lobster Tails (cooked and chopped) 
  • 2 tbsp. butter 
  • 1/4 cup parsley
  • 2 cloves chopped garlic
  • 5 oz Ricotta cheese
  • salt and pepper to taste

Method

  1. Heat the butter in a small sauce pan and whisk constantly until brown bits form on the bottom (should take 2-3 minutes). Once they are visible remove from the heat and continue to whisk for about 30 seconds 
  2. Add the garlic and parsley (Be careful!! the butter might splatter everywhere if its too hot) 
  3. Then add the lobster and ricotta whisk until uniform

Light Tomato Cream Sauce

Ingredients

  • 28 oz. San Marzano tomatoes with basil
  • 2 tbs. olive oil 
  • 8 basil leaves
  • 1 onion
  • 1 shallot
  • 2 cloves garlic
  • 1/4 cup parsley 
  • 1/4 cup light cream
  • salt and pepper to taste
  • 1/4 cup parmesan, plus more for serving

Method

  1. Chop the onion and add to a medium saucepan with olive oil, cook on medium low heat about 10 minutes or until translucent
  2. Add the garlic and shallot until browned. 
  3. Add parsley, tomatos and basil. 
  4. Simmer on low heat for at least 20 minutes- but if you want a realllyyyy flavorful sauce just simmer it all day while you slave over making individually hand made raviolis :) 
  5. Remove from heat and add cream and 1/4 cup parmesan (or to taste)
