Sourdough Pancakes


  • 511 g 100% hydration starter
  • 2 Tbs melted butter
  • 2 eggs
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder 
  • 1/2 smushed ripe banana (just use your hands- if you have an aversion to bananas -gasp-, use 2 T maple syrup instead 


  1. Whisk everything together
  2. melt butter on a hot pan or griddle. When it starts to bubble and foam put 1/4 cup of batter- flip when all the bubbles appear.

Side Note: Please feel free to add whatever kind of toppings your pancakes deserve (i.e. chocolate chips, strawberries, blueberries, whipped cream...)
